You should always train people to do it the way you like it, so that when the manager leaves, you have trained replacements. You lose nothing and you wonder, oh my god, all that information in their heads, what do I do now? Start documenting all your systems. There is no system too small or too big. Everything you do in your restaurant is done the way you want it to be, and that’s how everyone should do it.
